Tuesday: Crockpot Ham & Potato Soup and Sourdough Bread
There's nothing more comforting than a warm bowl of Potato Soup on a chilly evening. Whip up this creamy concoction using ALDI's fresh potatoes, onions, and a dash of

herbs. Paired with crusty bread, this soup is the epitome of cozy dining.
Add all ingredients to your crockpot on low for 8 hours or on high for 4:
5 lb Bag of Red Potatoes (Chopped)- One bag is $4.39, I used about half the bag for this recipe.
(Chopped) Celery $1.99
Baby Carrots $1.45
1lb Ham Steak (Chopped) $3.85
1 Yellow Onion (Chopped) $2.65 for a 3lb bag (You will only use one onion out of this bag, save the rest for a different recipe!)
2 Cans Cream of Mushroom Soup $.75 each -- $1.5
1/2 Gallon of Milk- $1.95
** Add cheese about an hour before serving to allow it to melt into the soup:
2 Cups Shredded Colby Jack Cheese - $2.65
Serve with either homemade sourdough bread (blog post about this coming soon!) or a loaf of sourdough from ALDI- $3.85
Total Price: $24.29
Wednesday: Chicken Alfredo with Broccoli and Salad
Indulge in a gourmet experience with Chicken Alfredo served alongside a crisp garden salad. ALDI's succulent chicken breast, velvety Alfredo sauce, and fresh greens come together to create a restaurant-quality meal right in your own home.
1lb Simply Nature Chicken Breast (Butterflied)- $5.79
Fresh Broccoli Crowns (Cut into florets)- $1.85
*Drizzle oil, oregano, garlic, and salt over chicken breast and broccoli on a sheet pan. Bake at 375 degrees for about 20 minutes until the chicken and broccoli are cooked through.
In the meantime, boil the fettuccine noodles $2.15 according to package directions. Add Priano alfredo sauce $1.89 and heat until desired temperature.
Serve the fettuccine alfredo topped with the roasted broccoli and chicken. Bon appétit!
I enjoy serving this meal with a side of one of the many salad kits ALDI has to offer. We especially love the caeser salad kit! $3.65
Total Price: $15.33
Thursday: Salmon with Roasted Veggies
Treat yourself to a heart-healthy meal by preparing Salmon with Roasted Veggies. ALDI's premium salmon fillets paired with a colorful medley of oven-roasted vegetables offer a feast for both the eyes and the taste buds. This dish is packed with omega-3s

and nutrients to keep you energized.
Toss all ingredients on a sheet pan and top with olive oil, salt, pepper, garlic salt, and onion powder. Bake at 400 degrees for 20-25 minutes (or until sweet potato is cooked through).
2 lb of frozen (or fresh) salmon. We enjoy using the frozen (only because it is drastically less expensive), but grab whichever you enjoy most! I leave the salmon partially frozen on the sheet pan so that it doesn't cook too fast since the potatoes need to cook a little longer $10.45
2 Sweet Potatoes (diced fairly small)- $3.32
1 Bag of Brussels Sprouts (cut in half)- $2.99
Total Price: $16.76
Friday: Beef and Rice Skillet with Salad
Wrap up the workweek with a quick and flavorful Beef and Rice Skillet. Using ALDI's lean ground beef, fragrant spices, and fluffy rice, you can create a satisfying one-pan wonder that is perfect for a cozy night in. This dish is sure to be a crowd-pleaser!

1 Bag of Jasmine Rice (Microwavable from Earthly Grains is the most time effective way, I have also made white rice in my rice cooker if I have more time) $1.55
1lb Browned Ground Beef- $4.79
1 Onion (Chopped)- Purchased earlier for the potato soup
1 Can of Diced Tomatoes- $1.05
2 Tbsp of Tomato Paste- $.95
1 Cup of Shredded Cheese of your choice (We enjoy cheddar with this) $3.29
In a large skillet, brown the ground beef with the chopped onion. Add garlic, salt, and black pepper. Stir in the tomatoes (drained), rice, and tomato paste. Bring to a boil and cook until all liquids are absorbed into the rice. Remove from heat and sprinkle on the cheese. Cover and let stand until the cheese melts, about 2 minutes.
I enjoy serving this dish with a salad kit $3.65 or toast.
