Learning how to preserve these foods in your own home can be a little bit daunting if you've never tried it. A great first step in learning how to preserve home grown food is by water bath canning. If you've been hesitant to try your hand at water bath canning, fearing it's too complex or time-consuming, fear not! This beginner's guide is here to demystify the process and get you confidently preserving your favorite fruits and vegetables in no time.
What is Water Bath Canning?
Water bath canning is a simple yet effective method of preserving high-acid foods by immersing sealed jars in boiling water for a specific duration. This process creates a vacuum seal that prevents harmful bacteria from spoiling your delicious homemade creations. Ideal for jams, jellies, pickles, and fruit preserves, water bath canning is a great entry point into the world of food preservation.

Canning tools: jar lifter, canning funnel, and bubble remover
Fresh produce and high-quality ingredients
Step-by-Step Guide to Water Bath Canning
1. Prepare Your Ingredients
Choose fresh, high-quality produce for the best results. Wash your fruits or vegetables thoroughly and follow a trusted recipe to ensure proper acidity levels for safe canning.
I recommend finding a trustworthy canning cookbook such as this one to find recipes that are safe for canning.
2. Sterilize Your Equipment
Wash your jars, lids, and bands in hot, soapy water, then sterilize them by either boiling them in water or using your dishwasher's sterilize setting.
3. Fill and Seal Your Jars
Use a canning funnel to fill your sterilized jars with your prepared ingredients, leaving the recommended headspace (found in your recipe). Headspace just means how much space is left at the top of the jar. Some recipes you cannot fill the jar all the way to the tippy-top, and your recipes will let you know how much space is needed with specific recipes in order to get the proper seal on your jar. Wipe the jar rims with vinegar, apply the lids, and screw on the bands fingertip tight.
4. Water Bath Canning
Place your filled jars on the rack in the stockpot, ensuring they are fully immersed by at least one inch of water. Be sure you use the rack at the bottom so that your jars do not break, the jars cannot sit directly in the canner/stockpot. Bring the water to a rolling boil and process your jars according to your reciepe's processing time. The processing time does not begin until your water is fully boiling! Once done, carefully remove the jars using the jar lifter and let them cool on a towel. You will begin to hear the most satisfying "POP" sound of your jars sealing once they are out of the canner!
5. Testing the Seal
After the jars have cooled, check the seals by pressing on the lids. If properly sealed, the lids should not flex up and down. Store any unsealed jars in the refrigerator and consume them promptly.
