Harvesting Tips: Canning Vegetables at The Hickory Homestead

As harvest season approaches at The Hickory Homestead in Iowa, it's time to start thinking about preserving all the wonderful vegetables from your garden. One of the most popular and traditional methods of preservation is canning. Canning allows you to enjoy the freshness of your vegetables all year round while also reducing food waste.

Here are some helpful tips and steps to ensure successful vegetable canning at home:
Start by selecting the freshest vegetables from your garden. Choose a variety of vegetables that are at their peak ripeness for the best flavor and nutritional value.
Wash and prepare the vegetables by removing any dirt, stems, or blemishes. Cut them into uniform pieces for even cooking and packing into jars.
Sterilize your canning jars, lids, and rings by boiling them in water for a few minutes. This will help prevent any bacteria from contaminating your preserved vegetables.
Prepare a brine or pickling liquid for your vegetables. You can use a simple mixture of water, vinegar, salt, and sugar to enhance the flavor and preservation of the vegetables.
Pack the prepared vegetables into the sterilized jars, leaving some headspace at the top. Pour the hot brine or pickling liquid over the vegetables, ensuring they are completely submerged.
